The benefits of our flavors
The first flavor comes from an alcoholic drink that can be found in many Creole cuisines and has different names. Krémas or Crémasse (Haitian Creole), is an alcoholic drink with a soft and creamy texture originating in Haiti. The drink is made mainly from coconut cream, sweetened condensed milk, evaporated milk, and rum. Dark rum is usually used, but white rum is frequently substituted. Various spices are added such as cinnamon, nutmeg, anise, as well as various ingredients such as vanilla extract. [1] Coconut punch from French Guiana and Martinique, and Chaudeau from Guadeloupe are derivatives of this drink. The first alcohol-based flavour and whose composition of this drink does not necessarily have any health benefits, but has an excellent taste. It can be compared to Baileys or Amarula; beverages that can be found in the Société des alcools du Québec. In our lactose-free ice cream mix, we use the self-made kréma blend of which we have control over the manufacturing ingredients and we use jelly dark rum with 50% alcohol.
The second fragrance came to me during an online survey. I asked my consumers what fruit or flavor they would like to have and soursop came up among the results. Soursop is also known as Soursop (English), Guanabana (Spanish). Soursop comes from the graviola tree or Annona muricata. Growing in warm regions of the planet, soursop is found in the Latin American region such as Brazil, Asian regions such as Malaysia and India. It is also found in the Indian Ocean region such as Madagascar and Reunion Island. It tastes sweet and tart at the same time. Its white flesh contains a lot of water, which is why it can be used in various ways: to make natural juice, tea etc. [2] The health benefits of soursop; amino acids, vitamins B1, B2 and C, and also alkaloids. Thanks to the richness of its composition, soursop has therapeutic virtues. Because soursops have natural antioxidants, they are very potent against cancers, including breast, ovarian, intestinal and liver cancers. Iron, phosphorus and potassium are also found in the fruit of graviola. Thanks to these properties, it regulates the functioning of the body. [3] In our lactose-free ice cream mix, we use 100% natural soursop frozen with no other ingredients.
Guaava, also a well-known fruit, is delicious in several recipes also known as Psidium Guajava, the fruit of the guava tree. This plant belongs to the Myrtaceae family and can grow up to 3 to 6 m. It can withstand both sub-zero temperatures and extreme heat. Guava is harvested in the fall. Guava is also known to reduce blood pressure. Guava consumption is recommended in case of high blood pressure. Thus, it would reduce the risk of cardiovascular diseases. In addition, it is said to lower bad cholesterol levels. [4] In our lactose-free ice cream mix, we use 100% natural guava frozen with no other ingredients.
Our fourth flavor; Pineapple and coconut, two very well-known flavors and popular in many dishes and desserts. Pineapple contains bromelain, an enzyme that breaks down large proteins, facilitates their evacuation, breaking down cellulite tissue and thus promoting fat elimination, even if it does not cause weight loss. [5] However, we do not promise weight loss in any of our products. In this recipe, the pineapple is candied and cut into chunks and we use the 100% natural coconut cream frozen without any other preservative ingredients.
Coconut and old-fashioned caramel, based on a traditional Haitian recipe known as "tablet kokoyé or a caramelized coconut bar", the chopped coconut is cooked in sugar and spices such as vanilla, nutmeg, cinnamon, and star anise to obtain a homogeneous paste that is left to dry and cut into pieces to enjoy. We took this same recipe and incorporate the thinner bits into our lactose-free ice cream mix. Coconut is known for several health benefits such as helping to stabilize blood sugar, is rich in potassium and antioxidants, aids digestion, and counteracts inflammation. It is also a source of iron, manganese, phosphorus and copper. [6] In our lactose-free ice cream mix, we use 100% coconut cream.
Our next flavor is mango, mango is a very popular fruit in the southern countries and widely consumed in the world. For this reason, it is the undeniable choice of our product range. A good source of vitamin A, C, B1, B6, E and copper. It also has antioxidant power, a good source of dietary fiber, a low glycemic load, promotes transit and satiety and anti-cancer properties. [7] In our lactose-free ice cream recipe, we use 100% mango puree.
Our seventh flavor is chocolate, a staple in ice cream. Regular consumption of dark chocolate, with a cocoa percentage of more than 70%, can help us stay alert and awake, making learning easier thanks to its flavonoid content. Regular consumption of dark chocolate helps to reduce "bad" cholesterol in the blood, and the same goes for blood pressure. It can reduce the risk of heart attack, helps strengthen the heart, improves blood circulation, and even more other benefits. [8] In our lactose-free ice cream recipe, we use 74% dark chocolate that we fuse into our mix. It gives a milk chocolate taste.
Our last flavour is passion fruit, which is very versatile in food and very delicious. Passion fruit is a source of powerful antioxidants, which neutralize free radicals, which are responsible for damage to the body, cancers and other diseases. Passion fruit protects us from cardiovascular disease by reducing bad cholesterol levels. Vitamin C (30 mg/100 g), present in passion fruit, participates in the body's defense. It is also famous for delaying the aging of cells and speeding up the healing process. It also contains vitamins A that are beneficial to vision as well as vitamins of the B group.[9]
Ice cream will generally keep for three (3) months and to do this, we use an ice cream stabilizer which is essential for the freshness and durability of the product. This stabilizer does not alter the taste of the product, which is based on rice flour and citric acid.
